Video making questions

Hi,

We will be needing to make videos of someone teaching. At times they will be facing the camera and at other times they will be facing the whiteboard and speaking.

The final videos will be viewed on the internet.

Can anyone recommend a suitable prosumer video camera that will have an external mic jack. Some of the things that I have found when doing some research which would be desirable are:

Manual Iris
Manual White Balance
3 CCDs
Headphone Jack
Sound Control
Audio Inputs


I am not sure if the above list will only be found on a full pro outfit or not.

As the lecturer will be facing away from the camera while talking we will need some sort of wireless mic - can anybody recommend what type of mic would be suitable here?

We have a good set of tripod legs but will need to buy a fluid video head - can anyone recommend a suitable solution for this?

We would like to try and keep costs down as far as possible but still get a quality product at the end both visually and sound wise.
