best interviewing software? Both Audio (phone) and video

Ok so this is something I would have thought would be really simple to find, however it's not.

I want to interview ewen and others but I have no clue how to even record it. I feel like a dummy!

Can anyone give me suggestions for recording a telephone (android cell) and a video interview (skype or whatever works).
