there are some email services which offer create a temporary email accounts only for 10 minutes use , just for purpose...

Yes definately use an autoresponder, but mailchimp is not a good solution as you'll be banned if you sedn affiliate promotions.
You can only have real stats if you know open rate, delivery rate...

Maybe a better strategy is to start the blog, and then run it successfully for x months. Then you will know what your revenue per visitor is and you can make a decision.
