I'd just add, an outline is your friend. Get something like OmniOutliner and start putting down the main topics...

I've written a few 100+ page eBooks (real content) and am working on a print book now.

My suggestion is this:

Create a table of contents. Chapters. Topics.

Come up with 3-5 major topics...
