you pretty much said it all

I have clients with hundreds of keywords on page 1 but most get very little traffic regardless on how competitive they are

Some keywords get more traffic...

It depends on the keyword, how many searches it gets, what position you are on page one, etc. Some keywords get barely any searches some get millions.

Some keywords are "buyers" or "actionable"...
