And by "editing" are you changing the contents of the site or its appearance?

If you are talking about a platform such as WordPress and editing the content then it will not make much of a difference. In WordPress when you type stuff out the HTML Editor puts all of that into the correct HTML code. The only time you need to use the HTML Editor is if you setting up a table or if you have to embed something.

When it comes to say using your cPanel and in the file editor then yes it will make a difference by cutting down on the headache you could possibly get.
Edit Button: With this you may as well use Notepad because you don't get anything special. Just plain old text that doesn't make a difference if there is code or not.
Code Editor: This is what I often use because it turns the coded sections into a certain color it helps out when trying to edit PHP or even simple things like CSS.
HTML Editor: This would be essentially the same as the code editor but would have less syntax available and thus it wouldn't differentiate the code as much.
