Onsite SEO for Category pages with hyperlinke thumbnails & no text

Hi all,
I have a question regarding 2 sites which has too little content on their 5-10 main category pages. Those pages have almost no content on them but have thumbnails and titles of various individual posts/products and those thumbnails are linked to those posts/product-pages.
I am perplexed on whats the best way to do effectively do onsite seo for such sites. I am inclined towards keeping the existing images on those category pages but adding 1000-1500 words content just below those images for the purpose of effective onsite seo. Would this be the right approach? Are there any alternatives?

    It's hard to see without knowing your niche but I had similar landing pages for eCommerce sites and I found that a couple of lines above the thumbnails and 150+ words would be enough. I also have a hotels website and that has 500 words on my regional pages.

    If you have a lot of products and you are using pagination, don't repeat that text on the sub-pages without taking the recommended steps outlined here.

    You don't need up to 1500 words of content to properly optimise the pages. A few hundred words of content is enough.

      Simply add unique product descriptions per each page. It doesn't have to be a book, just explain what traffic is looking at on the page. You could even get by with less text If you wanted & use the keyword text in an image caption per page/product.

        Yep...

        I turn some of mine into bigger landing pages but it's not often magic or anything. Just a little big about what it there with a few key subheadings in my case, just because I like to get them in.
