Niche Site ranking in Google... I have questions and you got answers!

Hi all,
I believe I have found a niche for my first website. I've done my keyword research and found a keyword that is earning around ~5k searches per month. Now I know that 5k is chump change for some of you out there, but 5k searchers for the first niche I want to tackle is not too shabby for me haha.
I scouted out the top 10 spots on google for the keyword phrase which is essentially the following:
1. youtube video w/ 2 backlinks only
2. youtube video w/ 0 backlinks
3. youtube video w/ 0 backlinks
4. wikihow w/ 3 backlinks
5. authority site with very weak content and hardly any backlinks
6-10 not much else.
Again, this may be the case primarily because I am targeting a niche that is fairly uncompetitive to get my feet wet before I tackle a more competitive scene.
My question is:
Is it nearly impossible to outrank youtube videos for the niche that I want to get in to? I am hearing mixed things about the difficulty and likelihood that I will outrank websites that are non-niche sites such as youtube, google maps, yelp pages, etc.
Note that I searched these videos and yelp pages and maps and they all have less then 3 backlinks and ~ 2-5 - 4.0 moz ranks.
