Exactly what keywords I rank for,

And which keywords I do not yet rank for..

What's the best software to use for this?

Did you try rank checkers like https://serps.com/tools/rank_checker or something similar?
If you google "keyword rank checker", you'll find plenty.

Obviously Manual way is best way to track exact ranking. But if you asking about SEO tools "Raven Tools" is more better option.

^ Google's Webmaster Tools isn't always accurate. They do show you a wide range of information (I do use it myself), but in terms of website rankings it doesn't offer much at all.
