I can see in Google webmaster one of the things they put front and centre is to submit a site map.

For a website that only has a landing page and then user log in do I need a site map?

Do I need to specifically exclude pages like forgot password ect?

In other words, is important to optimise my landing page and exclude the rest from crawling or does it make no difference to SEO?

it doesn't have much impact for a one page website. Sitemaps are really only needed if you have dozens of pages that aren't being linked to from other pages. I wouldn't worry about it, and I wouldn't worry about "excluding" pages either unless it's something you only want members of you website to see.

Yes it's important! And it's not a good idea to have a lax attitude about any aspect of SEO. Any real money site should have a decent amount of content and therefore need a sitemap. I submit them on all my money sites (PBNs no).

Your providing a map to help spiders crawl your site. What's also important is after you submit that sitemap and add more pages Google will give you crawl errors about your site.

For instance, I got a crawl error rate of almost 50% on my sitemap. I tried to crawl it myself and couldn't. So now pages aren't getting indexed.

When pages don't get indexed they don't get read.

Make sure you both submit the sitemap and make sure it's getting crawled regularly. Otherwise you might blindly wind up writing content that Google can't / won't index.
