301 redirect on multiple domain changes

We're looking at changing the domain for our site for a 2nd time. We currently have a 301 redirect for the entire site and all subpages from domain1.com/* to domain2.com/*.
Now that we're changing it to domain3.com, do we point each of the former domains at the new one or leave the current setup and then just point domain2 at domain3?
domain1.com -> domain2.com -> domain3.com
or
domain1.com -> domain3.com, and domain2.com -> domain3.com
