In my local market, there is a company that has (as example)
chicagoplumbing.com
Now I need to include both these words because I'm a plumber in Chicago (not really), so I have a few options:
1. bestchicagoplumbing.com
2. chicagoplumbing.co

plumbingchicago is taken.

All things equal with content on the website:
1. Does the .co make any difference versus the .com? Or am I being a dick having the same company name..?
2. Does having a prefix or suffix to the url make any difference. i.e. "best", or...
3. Do the words on the URL make make much of a difference relative to the search term used? For example, will my competitor outrank me because I have "best" as a prefix, but the customers only search for "chicagoplumbing"?"
4. How does the "-" change/impact results, i.e. chicago-plumbing.com?

Thanks for the feedback...

Exact keyword such as 'Chicago Plumbing' if you can get it than its great. But it is more likely in the real world that you will not get the keyword you are looking for. So, you will have to go for alternatives of it. In my opinion, 'bestchicagoplumbing.com' is a good one.'.com' domians always have a greater influence than any other domains except '.gov'.
Prefix or suffix or '-' does not make any difference, you can get ranked for any one of them if you do the SEO right.

      Domain is not a url.

There are more websites that don't use .com, than use .com.

.gov carries no more weight than the average donkey.

if you are not a plumber, why a website about plumbing?

A real plumber in chicago is probably spending more time on advertising and word of mouth, than worrying about some domain name.

A prefix or suffix, doesn't matter...until it does.

Yes you are right that word of mouth and advertising will work and should be focused, but don't forget that the Domain name plays a major role in terms of long term business methodology as this will directly impact on brand reputation and organic traffic. So doing some research before registering a domain is always a good practice.

Prefix or suffix or '-' does not make any difference, you can get ranked for any one of them if you do the SEO right.
Prefix and Suffix of "-" don't have any bad impact on domain name and ranking but it should be avoided as human tendency people love to remember easily the easy domain names and this "-" cause some times to wrong domain name typing.

bestchicagoplumbing.com is the best you can go ahead with it.

The TLD (.com, .net, .co, .org) has no impact at all on how well a site ranks. Likewise, the words in the domain name also have no direct effect on SEO. The only reason keywords in a domain name help to some extent is that when people link to you naturally using your domain name, the anchor text will have your main targeted keywords in it.

I would never get the .co version of an existing .com domain name just like I would never get the .net version of it. People are going to remember .com and you will be sending lots of repeat and referral business to your competitor if you are using a different TLD version of their domain name.

Why not brand yourself? "Findlay Chicago Plumbing" (findlaychicagoplumbing.com), for example.

From experience I've seen .COM rank better than .CO - you barely see any .CO in the SERPs for a reason.

That makes no logical sense. And less SEO sense.

.com has been around forever, .co only about 5 years. The number of .com domains in existence compared to the number of .co domains in existence has to be a staggering large difference. Don't you think that might be the reason why you see more .com than .co ranking? (Hint: the answer is: Yes).

    1. For ranking, you are better off having a .com than a .co. They are easier to rank.
    2. Having a prefix is not going to make a difference if you have good quality backlinks and quality content on the website. Exact match domains used to help a lot with ranking, but they are no longer giving a huge boost like they used to.
    3. It is possible that chicagoplumbing.com will outrank bestchicagoplumbing.com, but it will be based on domain authority, backlinks, and site content. The exact match domain is not going to be the main reason why it will rank higher.
    4. It is not recommended to use dashes in a domain name. You are better off creating bestchicagoplumbing.com or creating chicagoplumbing.net, or chicagoplumbing.org
