I launched a new website last week

It is only two page website index and privacy policy page
The home page is about 1000 words long

The site is in a low competition niche and is an SEO experiment and went in straight into google between page 8 and 10
I am currently doing basic basic off page seo and book marking the site
However checking it now I notice its not appearing in google seach for its main keyword and when i did a site:mydomain.com search all that came back was the privacy page not the index/home page

Is there a reason for this or any way to check if its been penalized the site is about 10 days old

    Low very low
    Maybe too low

It is an emd but the main key phrase (three words) as a whole comes up 3 times 0.89%

If you enter the exact domain in the address bar - does the site come up? If so, it is indexed. Being indexed only means you site shows up in the search engine - ranking is a different animal. Ranking such a thin site is a unicorn.

    an SEO experiment
It's really a one page site with a privacy policy. Trying to "SEO" that sounds like a waste of time to me.

Often when a site is first indexed, google slides it into a temporary space. Then a couple days or so later the site moves to where it deserves to be in the ranking. With a one week old site - that's probably what happened here.

I get that alright and as I said it is an expirement but I have had other one page sites in the past which I have used for PPC and it has been indexed but in this case The home page isnt showing at all

the key phrase I am using only has a difficulty level of 20/100 and 65,000 results

The number of results has nothing to do with how difficult something is to rank, and I have no idea what 20/100 means.

Really though, you said you just launched the site last week. It's a big freaking internet, and even with all of its resources, Google is not always going to pick up a new site that fast. It might take 3 weeks or more sometimes.

If you are really that worried about it though, set it up in search console and submit a sitemap. It will probably be indexed within 24 hours.

As one page is indexed and the other is not - you should also check carefully if you might have restricted it in any way accidentally (with any specific tag on the page, with robots or X-robots). In case everything looks fine - you should indeed try submitting a sitemap and allow Google some time, 10 days is not a huge time span so no need to worry yet.

site has seemed to have gone up in serps which is good
so there may be a bit of a dance going on

I seem to have gone up a page anyhow - still a long track to first page but building more links hope to make to page 1

No, Google doesn't de-indexed it But you have focus on quality links rather than quantity links.
