How do I get these Schema results?

A few weeks ago installed a plugin to use a review schema markup, which put stars reviews in my posts. But almost the next day, Google updated their schema and my reviews are no longer valid.

How do I get results like these? With score stars, topics and faqs (I believe that in the second image the review is also a faq)?

I've had poor results with Wordpress schema plugins and I think it's usually a result of where the plugin puts the code. You want your rich snippet code above all other schema code in your source, I found putting the code in the header yields the best results. Some plugins will give you the option in the settings on where it places the code.
Also, Google doesn't really support star ratings on the root domain or homepages. It's best to use them on your product pages or on pages that explain the services offered by the website.

    Hope this helps...

I did use the ratings on my product pages. I also used the plugin codes in the header. But if I understood correctly, the plugins I used did not updated to Google's new schema rules.

      What plugins do you recommend?

As I understand the review stars being displayed I believe you have to either be an "Ad" listing or a local 3 pack box listing for them to display. I did some searches on different terms and found none existing in the "Organic" search results.

But if you want to throw a link or 2 to search terms that do display them in organic, I would probably be better able to help you with the syntax differences

You can create schema rich results in rankranger website and set up mark up generator and validator for your site.
