Using 301 Redirect for BackLink Juice in Offsite SEO Strategy

I am planning to offer SEO consulting to small businesses and I am trying to clarify few things regarding 301 Redirect & Offsite SEO.
I will be using an aged domain of mine and create a directory for each client
Olddomain.com/client1-Keyword/
Then 301 Redirect it to the client's domain : client.com
1. Can I create a multiple pages Silo inside Olddomain.com/client1-Keyword/
then Redirect Olddomain.com/client1-Keyword/ -> client.com root ?
Will most of the link juice pass through even though it's from a folder to a root domain (where I will not be able to recreate the same silo structure and pages).
2. I will build all my links to Olddomain.com/client1-Keyword/
If I do a backlinkwatch on the client.com domain, will all the links i've done show up there ?
if they don't show up, would the link juice still pass to the client.
I am aware from Matt Cutts response that some link juice may be lost in a 301 redirect but it's a small price to pay to be able to control your Offsite SEO strategy
