My questions is if I have 3 keywords I am trying to rank for. Lets say

Weight loss
Medical Weight Loss
Weight Loss program

And I am able to get 3 valuable links and control the anchor text. Is it better for me to use one anchor text for each keyword or should I use all 3 on

"Medical Weight Loss Program"

Which would help me out more. I usually hear the more direct the better but in this case would it be better to incorporate all the keywords?

    Ideally you want the anchor to pertain to the keyword, but will do some mixing to make it look natural.

    Those are some very high competitive keywords. I hate to burst your bubble but I feel that you'll have a hard time ranking high for those from all the competition. Just my honest opinion. You can give it a shot, work hard and you never know.

    I would try to find a 4th valuable link and get the best of both worlds. I would surely mix up the anchor text.

    But like Chris said the examples you give are ULTRA COMPETITIVE. If you are going to go after keywords similar to that level of competition it is going to take more than 3 valuable links my friend.

    You are going to need a lot of good links and change up the anchor text, it won't hurt to mix it up a bit like you are thinking though!

    Use only one anchor text targeting all the keywords. This would do fine logically as well as practically. We've had the experience of doing it for major and long tailed ones where you go for the lower ends to attack the top tier. A double to triple digit figure of quality links would rank you top for sure, tested and guaranteed.

    I think its better that you use each of your desired anchor texts individually and don't combine them. It gives you very better result than combining them.
