If I have a site about uk cctv installers , might it be beneficial to pick up some extra traffic by doing an odd page about maybe something like a review of a holiday Ive just been on ? or should I keep the whole site completely on topic ?

I think you should keep it focused on the main subject. But you could spin the content about your holiday with something that involved your subject. Like you went on a holiday and there was a couple who could have need a cctv installeer blah blah..

That way its a win win.

This. You'd be surprised at what you can make at least somewhat relevant to your topic. I once wrote an article about mortgages that included an anecdote about a unicycle.

Try and keep your site relevant and on theme.

You will only confuse Googles spiders if you have non related subjects on your site. The best way to structure/get ideas for relevant related content is by using the Google Wonderwheel. That will tell you all the related phrases to your theme keyword that Google sees as being relevant.
