Question regarding # of global searches I should look for in my keyword?

Hi, I have been doing a lot of keyword research as of late and I have a couple questions before I proceed.
1. Since I am new to this, I have heard different numbers of global searches I should be looking for when trying to find a good keyword. I would just like that to be clarified. Should it be a couple thousand, maybe like 12,000 or in upwards of 40,000 global searches.
2. Should I focus on just a single keyword or phrase, or should I try to target a few different words or keyword phrases?
3. Lastly, is it possible that after my site takes off in a couple months or years or whatever, that I then focus on more competitive keywords, or do I always use the same one or two I started with?
