I understand this is a very generic question, and it depends on many factors, but forgive me for being curious!

A couple of my sites have been ranked #2 for a while now, and i've never been able to nick that #1 spot.

For people who are lucky enough to be sitting at the top of Google, did you notice a significant increase in Traffic, compared to being say 2nd and 3rd position?

1st place is always significant. If you were not previously aware

#1 can expect to receive about 42% of the traffic
    #2 cab expect around 12%

The difference is substantial for some keywords. But there are a lot of factors that can seperate the #1 from #2 positions. Backlinks and on-page optimization are a smaller part of the equation nowadays.

Some people say number 1 gets 40% and number 2 gets 30%
You know what though, there's so many things that could influence which site the visitor clicks on. One massive factor is the meta description or post excerpt that they see. If they think it's what they want, then they'll click

Yes, there is a significant difference, in my experience.

You can often increase your traffic at number two by writing a top-notch, benefit-laden title and description. Use your copywriting skills to get people to click on your link.

They depend a lot on the website. I look at the first 3 results usually when I search and look at what each site is about. Like are they thread topics, or an Ezine article or a merchant?

I think #1 and #2 will lead different visitors even though they rank with the same keywords.in my experience. when i search somthing on google,I will check the meta description which appear in the titles. If i am interested in the content, i will probably clink that one.
Even though in most condition,we all think the top #1 will be closer to your search result.but sometimes, i think we also should check the description.coz title is too general to know more.

I think that being in the #2 position is very respectable. I am also willing to be that #1 slot can bring significantly more traffic.

I really think that it depends on your niche and how your competition in the #1 slot is. If they have a horrible site or do not meet their search visitors expectations you might be getting more traffic as opposed to as if they provided what their visitors were looking for.
