How to structure Niche/Subniche for SEO purposes?

If I wanted to get traffic to some micro niche keywords, which of these would be the optimum way to approach it from an SEO perspective.

Take "health food" as an example and I want to target sub-niches within that broad niche where I have a chance of being competitive with keywords. The sub-niches may be "health food recipes", "health food supplements" etc.. etc..

How should I approach the targeting?

1) whateverhealthfoodsite.com/health-food-recipes/
whateverhealthfoodsite.com/health-food-supplements/

2) health-food-recipes.whateverhealthfoodsite.com
health-food-supplements.whateverhealthfoodsite.com

3) some-health-food-recipes-site.com
some-health-food-supplements-site.com

The content will be unique for each sub-niche. And the Title, Description, Meta tags etc. are kept the same for each sub niche for all 3 approaches.

Which of these 3 approaches will give me the best chance of ranking for my target keywords, which are "health food recipes", "health food supplements" etc.. ?

    I actually cover this in my upcoming book but it's not a trade secret or anything....so here's how you determine which URL to use:

    First, if whateverhealthfoodsite.com is already indexed in the search engines, it's moving forward and you're getting traffic to it, etc., then add the directories.

    If not, then use separate URLs such as in #3 above.

    Either way if the site is brand new, it will take a while to get a good position in the search engines depending on the keyword choices you make.
