is it possible that the current inbound links of a site change to another site?

Also how to analyze, how many inbound links and where they from?

what if -

we won't have access to the original website as it's being handed over as part of a trademark dispute, they'll be giving the domain to another company and loose all access to it to be able to 301 to another domain.

so we'd need to manually contact all the sites and ask them to relink to the new site asap,

what should I do in order to know how many links our site has?
and how to pull out all the links?

There are third party tools you can use such as Open Site Explorer, Ahrefs, Majestic.

...but the best thing is to add Webmaster Tools then go to "Your Site on the Web" -> "Links to Your Site" -> and hit the Download Button ...while you still have access to the domain.

Use all these tools and seo spyglass and pool together the links and them start to make contact with them all. Sounds like you have quite a task on your hands.
