    There's no such thing as the "health" niche. You can pick a niche related to health, such as eczema, and try and take a piece of the pie. Most health niches are pretty competitive, but some quality SEO can create some traffic for any competition level. How good are you at ranking websites?

    You should make a decision to work on a more detailed word relates to health niche. I mean we can not give you enough information when your desired keywords are not clear. For example to get more ideas, you can use Google adwords keyword tool and it helps you for finding keywords.

    You can compete, in health related niches, you just need to see if the keywords you can rank for will be worth doing the work to get there. And as several others have stated in the past, you can rank for anything, if you have enough, time, money, resources and/ or patience to get there.
