If you had 20-30 solid articles on lets say 'how to set up a dog training school'

With this being a sort of step by step guide what would you do?

I don't feel a blog will work as I need the first post I post to be first not last

You're just worried about the order? You can put posts in whatever order you want, for example using the sticky settings.
