Question on Caching

Interesting problem here:
So I'll check my latest Google cache and I'll see that my site was cached 5 days ago, say for example sake, on the 14th.
The next day I'll check my cache to see if Google has visited my site and I'll see that they cached my site 3 days ago. Anybody know why this could be happening? Why is it not showing my latest cache?

    With Google everything takes time, if you are expecting or even desiring immediate results then you clearly have headed into the wrong business. You really need to adopt the mentality of just working off a list of things you need to be doing and not what Google does or doesn't do because it can take them sometimes 2 to 4 weeks to update services, cache, backlinks, etc etc.
