One book I read that taught me a lot was:

Search Engine Marketing, Inc: Driving Search Traffic to Your Company's Web Site
by Mike Moran and Bill Hunt
    IBM Press

This is a little dated as far as algorithms, but as far as consulting for operational execution and identifying opportunities, this is a very good basis for understanding the business and management aspects.

For up-to-date tech stuff, check out Matt Cutts' Blog. He works for Google and is their chief spokesperson, and often answers questions about Google search on his vlogs.

If you're up for something a little bit more technical...

And want to know how Google works, read this paper:

The Anatomy of a Large-Scale Hyper-textual Web Search Engine.

    Written by Google original founders.

The conclusion has an interesting and potentially dangerous paragraph from Google (the Company's) perspective.

"Of course a distributed systems like Gloss or Harvest will often be the most efficient and elegant technical solution for indexing, but it seems difficult to convince the world to use these systems because of the high administration costs of setting up large numbers of installations. Of course, it is quite likely that reducing the administration cost drastically is possible. If that happens, and everyone starts running a distributed indexing system, searching would certainly improve drastically."

"Distributed Systems" referred to in the paragraph is what is referred to as the semantic web.

The Semantic Web movement is in part the Brain Child of the creator of the original WWW, Sir Tim Berners-Lee.
