Is there a way you can limit the ads to certain keywords?

Ie, say you have a site and only want advertisements from 'nike' and 'Adidas'
but not general shoes

Thanks!

Tons of shoe sellers who use adwords will be bidding on those words.
So, it would be a moot point. Nike may not even be targeting your
    site.

You could try and block each and every shoe ad that is not from Nike, but
    that would be insanity.

That's a shame - i'm getting all sorts of strange irrelevant ads on my site and there isn't a way to control them?

I've turned off Interest-based Ads Preference so it will look at keywords on my site but the ads are still not relevant.

Instead of banning some keywords, you should ban advertisers as well, Adsense allows this option, I think.
