Should we NOT put keyword in anchor text? Put "click here" or "this site"? Seems dumb. Should we never put keyword in anchor text or sometimes is okay or what?

You have to always make sure to use mixture of anchor texts to avoid over anchor text optimization penalty. At the same time, it does not mean that you should not add keywords on anchor text, you can at the same time, make sure you get some other links via other anchor text and it is not strict rule to stick with 'click here', you can use long related phrases to link - If you check out someone who gives a link to other site from their blogs naturally, they really do not link exact keyword, sometimes they say "here", "visit", or etc..... so it can't be DUMB.

Yes it seems dumb but for your tier 1 links (links going straight to your site) you should use your main keyword around 15% or less, so the rest of the time use domain, brand name, your own name or generic keywords as you showed.

You SHOULD use them.. You can't only have your main and your secondary keywords as anchor text.. About 10-15% should be Click here, Visit my website, etc.

I found having more anchor texts that say "Click Here" or the brand name works great! Still should have some anchor text links though.

Think of it this way.. if all your incoming links were natural, people everywhere wouldn't be putting "dog training courses" as the anchor text.. they would put the website name, click here, go here, visit this site, check this out, etc etc. Having 100% anchor text as your keyword is a dead giveaway that you are setting up the links yourself. Anyways, anchor text doesn't play as much of a role in terms of ranking anymore, but rather the overall subject in the text on the page.
