Segmenting Subdirectories in Google Analytics

I cant seem to find anything specific online as the information seems to be for the old layout. Basically im looking to segment out data for different subcategories (nike shoes, addidas shoes, asics shoes, etc) on my ecommerce site. I know I can make profiles for the different subdirectories but I want to be able to segment data we've already logged. Im not sure what custom segment to create. Thanks.

Im not sure what you mean? Like do I have the ability to? Id be willing to do a custom report of that gives me the metrics on the different subcategories but not really sure how to do those either.
