I have a thin review site that I want to beef up and hopefully drive more sales from increased traffic. However, the site's niche is in the health niche - more specifically medical. So it is extremely hard to find keywords that arent dominated in SERPs by webmd type sites. I have found very few keywords so far that are low comp.

I have a thin review site that I want to beef up and hopefully drive more sales from increased traffic. However, the site's niche is in the health niche - more specifically medical. So it is extremely hard to find keywords that arent dominated in SERPs by webmd type sites.
I have found very few keywords so far that are low comp.
I have little experience beefing up sites in big markets. So I am wondering if you should always find a good keyword for each new article you publish; or if you can get away with just writing some articles on the fly, on the hopes that some of the LSI terms eventually get picked up in google somewhere?
I find it hard to believe people who outsource hundreds of articles have keywords set for each and every one.
