What to do with client's site?...

I designed a website for a client on my own domain, and I'm waiting for him to have his domain available to move it there. In the mean time, Google indexed the site where it presently sits. So when I move the site, it could appear like duplicate content and hurt him in the rankings.

Any advice on this one that doesn't involve changing the text/images?

    Just delete the content off your site and wait a week. It might hurt his rankings short-term, but after a week or two it won't make a difference as long as the original source (your site) has removed the content.

    Don't delete the content. Just add some meta tags to your demo site and Google will not index it.

    Once you move the website to your client's domain, remember to remove the NoIndex meta tag.
