Remove all anchor texts from site blog?

Would that make sense? Do you think it would make sense to get rid of all anchor text to your money site from blog posts, even if it is relevant?

For example something that mentions x product, better to not have the keyword linked there or is once in a while ok?

Thanks

If the links are from relevant site or blog posts there is no need of removing them. Backlinks from relevant sites help in improving ranking of the site.

Don't remove the anchor text of your backlinks. Having links with relevant anchor text is better than no anchor text because relevant anchor text assists Google in establishing what your site or page is about. Make sure you vary your anchor text widely to avoid over-optimisation issues though.

Using multiple anchors and using variation between them is the best to do.

I wouldn't run 30% exact match anchors at all these days. Try 5-10%...

Now, Google is smart enough to detect references of your keyword in context to the link. So for instance, if the keyword is not hyperlinked but near the actual link which leads to your site, they will assume the link is related to that keyword. So you might be able to get away with not overly optimizing your blog backlinks and still gain SEO benefit.
