The way we do is is set up 1 landing page for every 5 products (make sure they are relevant and related), then we have our PPC adgroups matching keywords and displayed URL to improve the quality...

WP Zoom themes are very nice and very affordable, check them out. As for plugins, just search for must have plugins on google and you will find a huge list!
