One of the things I like about ODesk is the ability to pay on a project basis rather than hourly. That way you don't have to worry about what they do with their time. You can also read their history...

Like I said, it's common for them to have more than one "full time" job (I don't believe they're trying to rip you off - I believe they want to work hard)
