Deleted domains are the best :) Real easy way to get some traffic and authority. I would just keep posting relevant content and put up a redirect so you won't lose any traffic from the old backlinks...

You will receive favoritism in the search engine if your domain name contains the keyword(s) your targeting. Regarding the plural issue, it depends on which version receives the most search volume...
