Yes, I would test both.

But make sure you call them out correctly. If someone selected "Catholics" they are probably going to response to "Meet a Catholics" better then "Meet a Christian."

Sounds like the only way you would find out is to test and see what works best. Just like split testing - you need to know which one works best.

or chose a general dating offer and try whatever creative angle you can come up with
