You did activate them to be shown in your settings correct? You might be seeing an ad or something and not signatures if you didn't activate them.

"Quit Skype" completely closes it and removes it from my taskbar. You sure you didn't pin it? Right click the icon and if it says "Unpin this item" then click that and you're good.
