Pay no attention to CB gravity. It is a meaningless metric that is easily manipulated.

I had the most success with CB products under 30 gravity.

Everyone seems to want to be in the health/lifestyle market or MMO from what I can see. I suppose there will always be a market for dieting, fitness, healthy lifestyles etc. not my cup of tea though....

Anyone can create their own affiliate program. Some are more robust than others such as ShareASale, ClickBank, JVZoo, etc.

Some, such as Shopify and Bluehost have their own affiliate programs...

There are others like Clickbank and Warrior Plus.

But I don't just focus on promoting digital products.

I promote jvzoo products and I haven't had any problems with payments .Clickbank is another good affiliate program too as far as I know.It is up to you to investigate you might uncover something...
