Not sure if someone replied to you already, bit lazy haha. You can drag an email from the 'Promotions Tab' then put into the 'Primary Tab', and a message will pop up just click yes to that :)

Sure you could go for a broader topic. However if your plan is to get traffic to your blog Via SEO then that would be tougher. Whereas if you go for a sub-niche it's easier to get ranked...
