What does "people saw this post" mean? Why does it vary so much?

    It means just what it says "the number of people who saw a particular post" .. really isnt much to question there.

    It will vary depending on how many people share it / like it. That is the more people that share it or like it initially the more new people will see it. This process is called 'virility' because it can (like a virus) grow quantitatively ( 1 - 2 - 4 - 8 etc)

    It really means what it says: people saw it.

    Most likely they have seen it in their news feed where most of the action is going to take place.

    It is recommended to have as many people see it as much as possible.

    If it varies, it's mostly because you are not consistent with your status updates.

    Being consistent goes a long way for you.

    The numbers vary according to shares and likes a post receives. The more of them the more other people will see the post.

    The report on your fan page "insights" is very critical on how you can make improvement for your fan page. For me, it entails what excites my fans. What are the threads, questions or whatever topics that interests them. Then I start focusing on their interest. Afterall, the purpose of my fanpage is to deliver values to the marketplace and helping other people as many as we can.
