It really depends what you want to achieve with your websites. Many available FREE plugins let you get almost anything done. You may have to pay for a premium plugin to get all the extras.

I use Astra theme because it is very light and fast & Elementor page builder with all my websites and I'm happy with the results.

As with regards to the courses, there would be very little difference, because the course shows you how to build websites, the minor differences between themes is just a personal preference.
