How do I set more than one 'posts' page in wp?

I learned how to do it for one page where it seems to dump them ALL.

Well this is not sufficient because I want to dump all my latest posts into the 'main blog' category and would like other pages to dump other posts for different categories. For instance I want at least one more to place all my archived articles which I will not be showing but will keep in the archive for indexing purposes. I was thinking it would be more hassle to have to make a page for every article if I'm gonna have lots. I want to just make a category so I can dump them all in there as posts (separate form my new content).

At the moment I only see the option in 'reading' to do it for one page only.

If not that then what is another way to do it?

    You don't. Because you can't. Not in the way you wanted.

    Don't forget: by default WP can and does create what is called "category archives" - i.e. when clicking on a category's name you get the list of posts only in that particular category.

    Now, here is what you need to do in order to achieve what you want... just instead of working 'against' WP ("I want to set more 'post' pages") you will need to think and work along and with WP

    - find a method to exclude XYZ category from your main post page (there used to be more plugins for this, not sure if they work with 3.x.x - most of them don't)*
    - don't ever link to that hidden category archive

    * of course, instead of excluding you can include only the wanted category in the "posts page"... if there is no plugin that works, you can always alter the Loop (the "thing" that lists your posts in a template, LOL) to show/hide/do-something with the posts.
