I'd really like to hear from you WP techies out there - what are your thoughts on custom vs. "off the rack" Wordpress themes? I'm going to be building websites for a specific niche. There will basically me three offerings - low, medium, and high. I like the flexibility and abilities of Wootheme's Canvas theme a lot. It's really easy to add/ change menus, fonts, colors, new pages, and a whole slough of other stuff.

The "offshore" guys are telling me they can go either way - they can create custom themes or use Canvas.
Honestly ... what would you do, and why?
