I registered a new domain, to showcase my portfolio of 3d models, textures, animations, demo-reel, etc.
Really struggling if I should go the CSS route vs. full blown Flash site. CSS would be a lot faster for me, but Flash might look a lot better... Ugh, I can't decide.
I've been looking through templates off and on all day and can't come up with anything that really catches my eye.

What would you do?

Personally i'd go the CSS route. You can make just as nice of site with CSS and it will be a lot faster, or you could even mix and match your CSS & Flash. In my opinion, there is such a thing as "Too pretty".

Use CSS. Use flash for demos, videos and motion stuff. Having a CSS and HTML website will also make it easier for search engines to index your web pages and its contents.

Agreed. Although there are some tentative deals to make Flash text-content indexable, there hasn't been much movement on it, and it won't work on images anyway once it finally does work.

Also, a CSS/HTML/JavaScript site will be better to work on in the future. The next generation of browsers feature JavaScript engines that are much faster than the previous generation (starting with Chrome, which is the only released browser with this capability). What this means, is that ordinary JavaScript will soon be able to offer frame rates similar to Flash applications.
