Depending on what your theme can do, I often use the Exclude Pages plugin so I can decide which ones show up in the menu bar and/or widget areas.

Akismet (since it comes with the package);
if I need any kind of SEO stuff I prefer Yoast;

... and everything else depends on the site's specifics (and, eventually, its theme*).

Don't go by "what plugins", please! The right question to ask is - What kind of additional features do I need on this WP site that cannot be done with the core install? Make a list of the needed features... and you will find solutions. PLugins or otherwise

* if the theme has the Custom Menus option - and in 2014 ALL the themes should have it - then you don't need any Page exlude and similar gizmo because one can create very nice and versatile menus!

You're quite right, I should have been a bit more specific, I was looking at the more basic can't possibly do without plugins

I'm leery of adding too many especially if they are not needed as they can be a huge drain on my server.

I would have to say W3 Total Cache & Wordfence are must have plugins.
As Istvan said Yoast for SEO and Akismet. If a site is getting too much spam, I'll add WordPress › Stop Spammers « WordPress Plugins .
I use broken link checker, but I leave it off except to let it check a site from time to time, It can do it's thing in a few minutes while I'm working on a site. No need to have it loading the server full time.
