How does Google handle 'and' versus & symbol?

So maybe this question has been asked before but it's something I still don't have an answer for. How does Google handle the situation where you use the & (ampersand) symbol on your site versus the word 'and' to mean the same thing. Is the & symbol indexed literally or will it also appear when someone types in 'and' in the search?

The reason that I'm asking is how some businesses use the & symbol as part of a business name, for instance, "Jacobson & Sons Plumbing". However, if someone types in "Jacobson and Sons Plumbing", will Google suggest the correct spelling or show no search results? You could apply this question to any business/band name or symbol that has a word counterpart.

    Google knows the meaning of an ampersand.

    Example: fast & slow

    The word and/& is basically a connection between two things so the emphasis is on the surrounding words (ex: fast + slow). This (and/&) would have been a stop word years ago but the Hummingbird update kind of started using search intent.
