SAN storage is not faster than local storage (drives on the server itself) but if you're wondering how many sites you can host it depends on how much traffic you're getting. 2GB of ram is decent but if you have lots of WP sites or need a control panel like cPanel than it's better to have 4GB of ram.

Well, It will depdend on the traffic of your site, Btw, I will suggest one website on 2GB RAM Vps if your site gets good traffic, and if you want to host more sites increase your RAM Man.

A VPS is all your own.
You can host as many sites on it as you want.
But it would be limited by the amount of resources available on the server.

If the traffic increases, later on you would have to add ram, cpu and disk space, whichever falls short.
