Affiliates wanted for high ticket sales (Sale Value £300 to aff) - need help on how to set this up.

We have a rapidly growing offline business in the UK. We are looking to set up an Affiliate scheme to promote a particular offering we have. The sales price will be £1995 and the commission will be 15% i.e. £300 per sale. Its a lucartive market where we will be targeting people who are looking to set up an ethical cash generative business with a recurring revenue element.
The problem we are going to have is that this type of sale the end customer will probably want to talk to us or come on one of our seminars before they make the initial purchase.
The question is how do we track these people so we always make sure that the affiliate gets their commission if they dont pay online directly.
We know that affiliates with the right tools could make some serious money promotring this but we want to have a robust system to do it.
Any ideas guys.
