Securing data while using a proxy

I am not a tech head, sorry if this is to dumb for some guru's.
I am not in New Zealand at the moment but I wish to been seen as a NZ IP by a site. If I go into Firefox and go into the relevant section to do the proxy thingo, and set it to a NZ proxy, I would like like i am in NZ.

My question is, is it only the data I send through Firefox, I mena the browser, eg terms I write into Google that the owner of the proxy can see. If I was to receive mail in Thunderbird, can they get that too?

    I used to be able to track a TCP 0packet thru an elite proxy. It is not all that hard. Using a proxy is only good if you have lazy or non-tech-head clients.

    (Better to get a New Zealand host... then you are all good. )
