here is what i'm doing with my anchor text...

keyword one I keyword two ---- each with link.. is that good??

or should i do it this way... keyword one and two --- with only one link?

can i be found even if they type Keyword one OR keyword two? or is it better to stick with what i'm currently doing? Thanks

A relevant keyword is a good anchor text. Eg. The keyword you are trying to rank for.

Thanks Poorman... how about my other question is it good to combine the keyword 1 and 2? or is it better to separate them then point them to different urls?

For me it is best if you separate them and having them point to different landing pages. In that way Google would not have to think that you're spamming. And it is better if your anchor text is included in the meta keywords of your landing page. And like what mario said, a relevant keyword makes a good anchor text.

Choose the anchor text that is closely related to your site, or what your site is all about, then try to link build on them for a while until you rank up on that certain set of keywords.
