Moving website to another domain

Hi all.
- I have a mature/well ranked ecommerce site built with CubeCart at www.OLDSITE.com
- I now specialise in a specific product and have a new website built, but I want it to go live under a different domain name www.NEWSITE.com
- I will be selling some items which are from the old site, but not worried about URL matching to the new site
Do I:
1. Simply make the new website live at www.NEWSITE.com and setup a web forwarder 301 redirect from the old site to the new site?
2. Make a COPY of the old site at www.OLDSITE.com and host it at www.NEWSITE.com and then setup a forwarder 301 redirect (thus two identical sites running). Then after a week or so overwrite with the new website?
